Eating for Optimum Performance and Recovery
I have always thought that being active and being the best runner one can be goes hand in hand with healthy eating. If you fuel properly you will have a body that runs well – similar to putting good gas into our cars! This particular recipe contains buckwheat. For those of you who aren’t familiar with buckwheat – it is not related to the wheat family and is gluten free. It is a seed like quinoa. Some of you may have had it in pancakes after it has been ground into a flour. In this recipe I soak the buckwheat overnight in water to soften the seeds and it has a wonderful texture.
Health benefits include:
high in fibre
has all of the essential amino acids
is grown without pesticides
high in minerals like copper, magnesium and manganese
high in tannins (think of the benefits of tannins in tea or red wine)
